Stay at Home with One-Pan Fajitas
Nothing says comfort food like a warm meal to combat the freezing cold of winter. This week, we’re putting a one-pan spin on a classic with these easy-to-make fajitas! Made in less than thirty minutes, you’ll ditch hours of prep and cleanup so you can get back to the things that matter most - like shoveling the driveway or hiding from the polar vortex. Whether you prefer steak, chicken or a hearty veggie mix, with one pan you can get it all.
Bonus: Fajitas are perfect for busy weeknight meal prep – simply wrap the leftovers in a tortilla or use on top of a salad for lunch the next day!
One-Pan Fajitas
Ingredients
- 2 Old El Paso Taco Seasoning Mix
- 3 tbsp olive oil
- 4 tbsp lime juice
- 4 garlic cloves, minced
- 2 lbs flank steak, sliced
- 1 red pepper, sliced
- 1 yellow pepper, sliced
- 1 poblano pepper, sliced
- 1 1/2 lbs chicken breast, sliced
- 1 yellow pepper, sliced
- 8 oz portobello mushroom, sliced
- 1 onion, sliced
- 1 red pepper, sliced
- 1 Old El Paso Taco Dinner Kit
Directions
- In a bowl, mix together the olive oil, lime juice, garlic and Old El Paso Taco Seasoning to create the marinade.
- In a large bowl, combine steak, red pepper, yellow pepper and poblano pepper. Pour half of the marinade over the veggies and steak, mix well.
- In a separate bowl, combine chicken, yellow pepper, onion, portobello, red pepper and the rest of the marinade, mix well.
- Let veggies and meat marinate for 5-10 minutes.
- Bake at 425ºF for 15 minutes.
- Serve your fajitas in either a hard or soft taco shell from Old El Paso Taco Dinner Kit and enjoy!
